| 中文摘要 | 本研究之目的在於探討在高油與膽固醇飲食下,薏仁的攝取對倉鼠之肝臟脂質的影響。實驗動物為雄性倉鼠42隻,採隨機取樣將其分為7組,其中6組分別以精白米、糙米、精白薏仁、糙薏仁、燕麥或高筋麵粉為主飼料,實驗飼料為高油高膽固醇以引發脂肪肝,另一組以商業飼料(rat chow)飼養,作為低油魯飲食之比較。動物飼養8週,期滿後將倉鼠禁食一夜,犧牲取樣及進行肝臟脂質的分析;另外,也將肝臟切片觀察脂肪堆積的情形。實驗結果顯示肝臟總脂質、膽固醇及三酸甘油酯以低油之rat chow組最低。而在高油飲食下,以糙薏仁、精白薏仁與燕麥組之肝臟總脂質皆明顯低於糙米及高筋麵粉組(p<0.05),但三組間沒有差異。肝臟三酸甘油酯則糙薏仁、燕麥及高筋麵粉組低於其他三實驗組(p<0.05),精白荄仁組之三酸甘油酯則低於糙米組(p<0.05)。至於肝臟膽固醇含量則糙薏仁組低於其他高油飲食組(p<0.05),精白薏仁組明顯低於精白米及高筋麵粉組(p<0.05),燕麥及糙米組顯著低於高筋麵粉組(p<0.05)。肝臟切片觀察發現給予精白米、糙米和高筋麵粉組均有嚴重的脂肪肝,尤其高筋麵粉組已有肝細胞壞死的現象;而精白薏仁和糙薏仁組就輕微許多,僅門靜脈附近有些脂肪堆積,此結果顯示攝取薏仁可減緩脂肪肝之發生。 |
| 英文摘要 | This study investigated the effect of adlay on liver lipids in hamsters fed a high fat and cholesterol diet. Forty-two hamsters were randomly divided into 7 dietary groups. One group was fed rat chow as a low fat control and the others were fed polished rice, brown rice, polished adlay, dehulled adlay, oat or high gluten flour experimental diets, respectively. In each experimental diet, high fat and cholesterol were mixed together to induce fatty liver and to investigate whether adlay prevented fatty liver. The animals were fed for 8 weeks and then starved over-night and sacrificed for liver lipid analysis and to obtain liver sections. Results showed that the values of total liver lipids, triacylglycerols (TG) and cholesterol were lowest in the rat chow group. The hamsters fed dehulled adlay, polished adlay or oat showed decreased total liver lipids compared to the ones fed brown rice or high gluten flour (p<0.05). There were no significant changes in the adlay and oat groups. The liver TG in the dehulled adlay, oat and high gluten flour groups was lower than that in the polished adlay, brown rice and polished rice group (p<0.05). Furthermore, the hamsters fedpolished adlay diet had lower liver TG than did those fed the brown rice diet (p<0.05). The hamsters fed dehulled adlay diet had the lowest liver cholesterol among the high fat diet groups (p<0.05). The levels of liver cholesterol were lower in the polished adlay group than in the polished rice and high gluten flour groups (p<0.05). It was also observed that the concentrations of liver cholesterol in the oat and brown rice groups were lower than those in the high gluten flour group. Hamsters fed polished rice, brown rice or flour diet showed induced fatty livers. It was found that the high gluten flour diet caused liver necrosis in this study. However, there was much less fat accumulation around the portal veins in the livers. This result demonstrated the ingestion of adlay may prevent the cause of fatty liver. |
