英文摘要 | Understanding food demand structure is critical for the economic analysis of various agricultural policies. Two PIGLOG type demand systems are employed to estimate demand elasticities of six aggregate food groups using the sample data obtained from food balanced sheets and urban retail prices of food commodities. The empirical results show that the estimated own- prices elasticities are all inelastic for aggregate food groups except staple food, being positive, with unexpected sign. The estimated expenditure elasticities indicate that staple food is negative; vegetable and others are both positive but less than one; fruits, meats, and dairy products are all greater than one. In addition, most of the estimated cross-prices elasticities are negative, representing among six aggregate food groups being complementary. |
