中文摘要 | 本石研究探討活台灣蜆(Corbicula fluminea Muller)於5∼25℃貯藏期間,腺�� 三磷酸 (adenosine triphosphate; ATP) 及其相關化合物 (ATP-related compounds; ARC) 與游離胺基酸 (free amino acids; FAA) 含量之變化。原料蜆之 ARC 組成,以 ATP、腺�� 二磷酸 (adenosine diphosphate) 、 腺��酸 (adenosine monophosphate) 、 肌��酸 (inosine monophosphate) 及次黃嘌呤 (hypoxanthine) 等佔大部分。 於不同溫度貯藏中 ARC 的變化模式並不一致,惟 ATP 含量均於貯藏後逐漸降低,至初期腐敗之前 ARC 總量約 減少 4 ∼ 11%, 上述四種核��酸含量則減少 12 ∼ 29%。 原料蜆之 FAA 組成, 麩胺酸 (glutamic acid)、麩胺醯胺 (glutamine)、丙胺酸 (alanine)、 鳥胺酸 (ornithine)、離 胺酸 (lysine)、精胺酸 (arginine) 等含量較高。貯藏中 FAA 總量均呈現明顯上升的趨勢 ,至初期腐敗之前分別比最初含量增加 29 ∼ 83%,其中以麩胺酸及丙胺酸的增加更明顯。 |
英文摘要 | Changes in the levels of adenosine triphosine triphosphate and related compounds (ARC), and of free aminr acids (FAA) of live freshwater clam (Corbicula fluminea Muller) during storage at 5-25 ℃ were investigated. Adenosine triphosphate, adenosine diphosphate, adenosine monophosphate, inosine monophosphate, and hypoxanthine were the dominant compounds in the raw materials. The degradation patterns of ARC varied depending on the storage temperature. A gradual decrease in adenosine triphosphate, however, was found in all samples stored at different temperatures. The total content of ARC decreased by 4-11% prior to initial decomposition while a decrease of 12-29% was observed for the four nucleotides. Glutamic acid, glutamine, alanine, orinithine, and arginine were the major FAA. The total amount of FAA increased markedly during storage at different temperatures, resulting in an increase of 29-83% before the onset of initial decomposition. The increase of glutamic acid and alanine was especially pronounced. |
