英文摘要 | Sorption isotherms of peas with three different treatments were measured by ERH determination technique of five temperatures. Four ERH models included the temperature term and GAB model are used to evaluate the fitting-agreement of sorption isotherms. EMC data rom published literature were selected to compare the effect of varieties on the sorption isotherms of peas. The result of this study indicated the sorption isotherms of peas were affected by the hysteresis and treated temperatures. Compared with published data, the sorption data was significantly different among the varieties. The Modified-Henderson equation was an adequate model for the sorption data of three treatments in study. No universal or best ERH/EMC model could be found for the sorption isotherms of peas from published data. The GAB model was not a good model applied on the ERH/EMC properties of peas. It was difficult to incorporate the temperature term into GAB parameters. |
