英文摘要 | During the enzymatic hydrolysis of lactose, oligosaccharides could be simultaneously synthesized. The order of enzyme sources for maximum oligosaccharide formation was Bacillus circulans > Kluyveromyces fragilis, and Saccharomyces lactis > Aspergillus oryzae. Methods of enzyme immobilization could affect the quantities of oligosaccharide formed. In the case of B. circulans lactase, the order of oligosaccaride formation based on the enzyme forms was agarose and silica entrapped > native > fiber entrapped. The mechanism for the formation of disaccharides and trisaccharides for lactases from A. oryzae, K. fragilis and B. circulans lactases were similar. |
