中文摘要 | 愛玉果凍之原料取自果實內部,附著於瘦果上的果膠。果實採摘後,愈快乾燥果 膠品質愈高,愛玉果皮甚厚但無食用價值,必須大量削除,才能快速乾燥。本研究將專業 果農的人工削皮處理數據予以量化,作為設計自動削皮機械的試驗指標。試驗結果,由表 皮之靜摩擦角可以確定果型愈小愈不容易切削,機械切削時,果實分級有其必要,且切削 刀刃角必須小於表皮靜摩擦角(30 )。削皮率35.9∼39.7%乾燥後的重量比22.9∼27.1%表 皮含水率84.8∼85.6%,內部瘦果含水率較表皮低。 |
英文摘要 | The material of the jelly of Ficus awkeotsang Makino is made from pectin which is attached with the inner of thin fruits. It got better pectin quality when dry the fruit soon after harvesting. The peel of Ficus awkeotsang Makino fruit is thick, but it has no edible value. It can dry quickly if we get rid of the peel plentifully. In this study, we made to measure the labor peeling treatment data which got from professional farmer, and used it for the test and device goal of the automatic peeling machine. The results shown that it is not easy to cut and peel when the fruit is small in terms of the skin's static friction angle. It is necessary to scale the fruit when cut and peel by machine. The angle of the peeling knife fork should less than the skin's static friction angle (30 ). The percentage of peeling is 35.9-39.7%. The weigh ratio after drying is 22.9-27.1%. The percentage of skin's water is 84.8-85.6%. The percentage of water content in inner thin fruit is lower than skin. |
