英文摘要 | The rate of deastringency of the persimmon fruits treated with carbon dioxide were the fastest among calcium oxide suspension, ethanol and carbon dioxide treatments. The rate of fruit softening of the persimmon fruits treated with ethanol and calcium oxide suspension were lower than that with carbon dioxide. The biosynthesis and action of ethylene were involved in the softening of persimmon frutis after deastringency, according to the high ethylene production of fruits treated with carbon dioxide and the i ibitor of softening by 2,5-norbornadiene (NBD, a competitive inhibitor of ethylene). In addition, the relationship between the gas composition and calcium contents of pulp and softening was discussed in this paper. |
