中文摘要 | 本研究從大豆煮汁的酵素分解物中分離出8種其有抑制血管收縮素轉換酵素活性的胜□。經一次構造解析結果,這些胜□分別為:Val-Thr-Val-Pro-Gln,Val-Val-Phe-Asp, Gly-Glu-Leu-Phe-Glu, Ile-Thr-Pro-Leu,Gln-Val-Val-Phe, Val-Gln-Val-Val-Phe, Ile-VaI-Phe-Asp-Ala和Gly-Asp-Ala-Pro-Asn,半數有效濃度值(IC□)分別為6.3, 3.9, 2.3, 5.2, 4.6, 3.4, 4.1及2.8x10□M,其中以Gly-Glu-Leu-Phe-Glu的2.3x10□M為最低。具有抑制血管收縮素轉換酵素活性的胜□中,多含有疏水性及芳香族胺基酸,該特性與活性的表現有密切的關連性。 |
英文摘要 | Eight inhibitory peptides of angiotensin I converting enzyme (ACE) were isolated from the hydrolysate of soybean broth. The amino acid sequences of these peptides identified by Edman procedure were: Val-Thr-Val-Pro-Gln, Val-Val-Phe-Asp, Gly-Glu-Leu-Phe-Glu, Ile-Thr-Pro-Leu, Gln-Val-Val -Phe, Val-Gln Val-Val-Phe, Ile-Val-Phe-Asp-Ala and Gly-Asp-Ala-Pro-Asn. The IC□ value of these peptides for ACE from bovine lung were: 6.3, 3.9, 2.3, 5.2, 4.6, 3.4, 4.1 and 2.8 X 10□ M, respectively. These peptides contained hydrophobic and aromatic amino acids. This characteristic was considered to be highly related to their inhibitory effect on ACE activity. |
