中文摘要 | 本研究以酸菜心及酸菜葉榨汁液為原料,以Capsul�僧剪n壁物質,利用噴霧乾燥 法探討不同加工條件對其粉末性質之影響。所製成微膠囊粉末之一般性質受噴霧乾燥溫度、 膠囊壁濃度及核心物質╱囊壁物質比例而有不同程度之影響。如酸菜心榨汁液微膠囊之真密 度、空隙率及流動性隨噴霧乾燥溫度提高而增大;膠囊壁物質濃度提高亦會造成微膠囊之真 密度、空隙率及流動性之上升;而核心物質╱囊壁物質比例之降低�D造成真密度及流動性之 下降。於色澤方面,若噴霧乾燥溫度愈低則白色度 (W.I.) 愈高,然白色度�D隨囊壁濃度之 提高而有明顯下降之趨勢。本研究所得較佳之噴霧乾燥條件為:酸菜心及酸菜葉濃縮液之噴 霧乾燥溫度分別為 160 ± 5 ℃ /100 ± 5 ℃及 140 ± 5 ℃ /95 ± 4 ℃; 膠囊壁濃度 及核心物質╱囊壁物質比例兩者皆為 40% 及 1/10。電顯圖顯示由上述噴霧乾燥溫度、膠囊 壁濃度及核心物質╱囊壁物質比例所製成之微膠囊皆為表面結構光滑之圓球形狀 |
英文摘要 | Juice extracted from cores and leaf tips of mustard pickle waste was emulsified with solution of Capsul �� as the well material Spray drying method was applied to make microcapsules, and the effecs of different process conditions on the propertis of the microcapsules were examined. The microcapsule properties were affected by the sprary drying temperature, wall material concentration and core material/wall material ratio. The true density, interparticle porosity and flow ability of microcapsules prepared from mustard pickle waste core showed higher values when high spray drying temperatures were applied; the same pattern was found under wall material concentrations; however, lowering the ratio of core material/wall material caused the true density and flow ability to derease. The W.I. value of the microcapsules was counter proportional to the spray drying temperature and the concentration of the wall material. The suitable conditions for preparation of spray drying microcapsules from mustard pickle waste were spray drying temperatures for core waste and leaf tip waste of 160 ± 5 ℃ /100 ± 5 ℃ and 140 ± 5 ℃ /95 ± 4 ℃, respectively. The wall material concentration was 40% (w/w), and the core material/wall material ratio was 1/10 for both samples. Scanning electron micrographs showed that the structure of the microcapsules aredared at the spray drying temperature,wall material concentration and the core material/wall material ratio mentioned above had a round ball shape and smooth surface. |
