中文摘要 | 本研究係以乳化劑單硬脂酸甘油酯(glycerol monostearate; GMS)為包覆材料,藉其對丙酮之溶解性以利低溫噴霧乾燥,進要硫酸亞鐵(ferrous sulfate)之微膠囊化。其目的在探討硫酸亞鐵微膠囊化之製備條件,期能製備一具有阻遏促氧化作用之鐵質添加劑,可提供鐵強化嬰兒乳粉之良好鐵源。以GMS進行硫酸亞鐵微膠囊化,所探討之影響因子有:GMS濃度、微膠囊化條件(包括進氣溫度、噴霧流量)、顆粒大小等。結果顯示:以高濃度(12或5%)囊壁材質GMS和6%核心物質硫酸亞鐵,於進氣溫度50℃、噴霧流量400 1/h,進料速率1,200ml/h之條牛下進行微膠囊化,可得硫酸亞鐵微膠囊,將其添加在全魯乳粉中,經高溫貯藏後,其脂肪氧化安定性較佳。 |
英文摘要 | Microencapsulation of ferrous sulfate was prepared by low temperature spray-drying in which glycerol monostearate (GMS) was the wall material. In order to supply a qualified iron source with reduced pro-oxidative stability for iron-fortified infant formula, this study was conducted to investigate the preparation conditions of microencapsulation of ferrous sulfate. Using GMS to microencapsulate ferrous sulfate, several affecting factors were investigated; the GMS concentration, condition of microencapsulation (including inlet temperature and spary flow) and praticle size. The results showed that the ferrous sulfate microcapsule could be obtained by microencapsulation using high concentration (12 or 15%) wall material GMS and 6% core material ferrous sulfate under the condition of inlet temperature 50℃, spray flow 4001/h, and feed rate 1,200ml/h. when the microcaphsule was added into whole milk powder, after high temperature storage, better oxidative stability of lipid could be achieved. |
