英文摘要 | The objective of this study is to use the development of a mathematical model to investigate the sterilization efficiency when a continuous steam injection sterilizer is used to treat the suspended carrot particles in a water liquid medium. The sterilization of the carrot particles is by means of the thermal conduction of high temperature liquid medium-water to increase the inside temperature of the carrot particles. Unsteady state energy balance equations are used to calculate the temperature distribution of the carrot particles in the holding section and cooling section of the sterilizer. Then the sterilization efficiency of the liquid medium and carrot particles in the steri lizer is calculated by using an unsteady state microbisal balance equation under this temperature distribution. The calculated results show that the liquid medium reaches the required standard sterilization efficiency of 10 after passing through the sterilizer in 32 seconds with the sterilization temperature r at 140 ° C and with a 40 m �� /hr flow rate. However, the level of the sterilization at the core of the carrot particles is only 10, which is far below the sterilization requirements. This result has a serious effect on the health safety of food.In order to reach the required standard sterilization efficiency, an increase in the residene time in the holding section and a reduction of the sterilization temperature are necessary. |
