中文摘要 | 以紅土法醃漬四週之鹹鴨蛋蛋白液為原料,經噴霧、凍結、熱風與滾筒等四種不同方法進行乾操,所製得之鹹鴨蛋蛋白粉,探討粉末性質與對起泡、乳化及加熱成膠性質的影響。結果頸示:乾燥粉末的一般組成,各組間並無顯著差異。比較粉末之可溶性蛋白質含量,以凍結乾燥組之99.8或為最高,而滾筒乾燥組7.5%為最低。在表面疏水性方面,噴霧乾燥組的347.9(Se/100mg egg white powder)為最高,約滾筒乾燥組的4倍。以熱示差掃描分析其變性吸熱波峰,除滾筒乾燥組無波峰外,其他組之變性溫度往後位移約10℃。由電泳得知蛋白質分子分佈除滾筒乾燥者之外,其他各組相似。鹹鴨蛋蛋白粉之起泡特性此新鮮鴨蛋蛋白液或鹹鴨蛋蛋白液下降4~8倍。在乳化活性方面,各組間除滾筒乾燥者乳化層較低外,其他並無顯著差異。各組在10%(w/w)蛋白質濃度下,於80℃進行加熱,噴霧乾燥組有較佳之膠強度,而滾筒乾燥組則無法成膠。膠體之硬度,各組間並無顯著差異。 |
英文摘要 | Salted duck egg white powder (SDEWP) was used to study the effects of different drying methods (spray drying, freeze drying, hot air drying and drum drying) on powder characteristics and foaming, emulsifying and gelling properties. There were no significant changes in proximate composition and NaCI content of SDEWP with different drying methods. The protein solubility of SDEWP with freeze drying and drum drying is 99.8 and 7.5%, respectively. The surface hydrophobicity of SDEWP with spray drying was 347.9 (Se/100mg SDEWP), which was 4 times higher than the drum-dried sample. Denaturation of SDEWP was studied using a Differential Scanning Calorimeter by monitoring the transitions. All the samples, except the drum-dried, showed one transition at 94℃ while fresh duck egg white was observed to undergo transition at 84℃. The foaming properties of SDEWP were decreased 4~8 time after the drying treatment. There were no significant differences in emulsifying activity between the different samples except in the drum-dried sample. At a 10% (w/w) concentration of protein, the spray-dried sample showed the highest value in gel strength. However, the drum-dried sample could not form a gel. No significant differences in the values of hardness among the different drying treatments were found. |
