中文摘要 | 為瞭解本省不同季節生產養殖文蛤之化學成分,民國82年11月至83年11月間每二個月自雲林臺西養殖戶採樣與分析。一般成分之變動小,採肉率(11.3~16,7彩)以5及7月份較高,肝醣含量(1,103~1,432mg/100S)以7月份較高。游離胺基酸(FAA)總量在913~1,299mg/100g間,以牛磺酸含量最多,另包括丙胺酸、麩胺酸、精胺酸及甘胺酸等五種主要 FAA即佔總量之84~91%,且和FAA總量均以7及9月份高於其他月份。核?及相關化合物總量(3.74~4.57μmole/g)在5及7月份較高,有機酸(234~504mg/100g)中以琥珀酸量校多,蘋果酸及檸檬酸其次,在夏及秋季生產之文蛤有機酸總量及琥珀酸較高。萃取物氮量大抵呈現由春季往冬季逐漸上升之趨勢,從以上結果顯示夏、秋季生產文蛤之肝醣、呈味胺基酸、琥珀酸等含量較豐富,推測此季節生產之文蛤風味可能較佳。 |
英文摘要 | Cultured hard clams (Meretrix lusoria) were collected from November 1993 to November, 1994. The seasonal changes in proximate composition were not significant. Meat yield (11.3~I6.7%) was higher in clams collected in May and July than in other seasons. Glycogen (1,432 mg/100g) was the highest in hard clams sampled in July. Total free amino acids (FAA) ranged from 913 to 1,299 mg/100g. The most predominant FAA was taurine. Major FAA included alanine, glutamic acid, arginine and glycine in addition to taurine the which amounted to 84~91% of the tote1 FAA. Hard clams sampled in July and September contained higher amounts of FAA than in other months. The amount of nucleotides and related compounds (3.74~4.57μmole/g) was higher in the samples in May and July than those in other seasons. Organic acids were higher in winter and lower in spring. From the results obtained in this study, hard clams harvested in summer and autumn may be more palatable than other season due to the higher contents of glycogen, taste amino acids and succinie acid. |
