| 英文摘要 | The heat resistance of Bacillus polymyxa spores was evaluated using capillary tubes. The D value at 92℃ was found to be 2.6 min with a z value of 10.2℃. Pectin solutions with a viscosity reading between 200 cps and 780 cps as well as guava nectar at 780 cps were deaerated and then processed in a simulated tubular heat exchanger system. The achieved lethalities in the deaerated samples and their corresponding controls were evaluated either by integrating the time-temperature data or by inoculating with the spores and quantitating for the destruction occurred. Results showed that the deaeration pretreatment had no significant effect on the achieved lethality. |
