| 中文摘要 | 為瞭解市售雞蛋脂質組成與下蛋母雞年齡之關係,由桃園某養雞場購得攝取相同飼料之39、62、93週齡等三個年齡層之來亨品系(White Leghorn laying hens)蛋雞所下之蛋一批,分別任意選取十六個蛋作為供試樣本,進行脂質萃取及分析。結果發現,全蛋重量及蛋黃脂質含量均受到下蛋雞齡之影響,93週齡之母雞所下之蛋的平均重量為39週齡及62週齡之1.14及1.06倍;而每個蛋之總脂質含量亦以93週齡者為最多,分別為39週齡及62週齡之1.14及1.25倍;每克蛋油所含之膽固醇量與雞齡無顯著差異,但如就每個蛋之膽固醇含量作比較,則顯示93週齡蛋含量顯著較多,分別為39週齡及62週齡之1.17及1.35倍;磷脂質含量無論是以每克蛋油或以全蛋含量表示,皆顯示93週齡蛋含量顯著較多,如以全蛋含量表示,顯示93週齡蛋分別為39週齡及62週齡之1.23及1.25倍;脂肪酸組成則顯示雞齡愈大其多元不飽和脂肪酸(polyunsaturated fatty acids)含量顯著較少,單元不飽和脂肪酸(monounsaturated fatty acids)則顯著的較高。 |
| 英文摘要 | In order to understand the differences in the yolk composition of eggs laid by differently aged hens, this study was carried out. It was found that eggs laid by 93-week-old hens were about 18% heavier than those laid by 39-week-old hens, and that the yolk contents were about 18.9% higher for eggs laid by the 62-wek-old hens. However, the cholesterol contents did not differ significantly with the ages of the hens. The phospholipid contents of the egg oil or of whole egg was found to be positively related to hen age. As to the fatty acid composition, it was found that the polyunsaturated fatty acid (PUFA) content was significantly higher for eggs laid by the younger hens while the monounsaturated fatty acid (MUFA) content was significantly (p<0.05) higher for eggs laid by the older hens. |
