中文摘要 | 將花生油分別經不同之脫膠及水洗處理,來探討其最佳條件。在脫膠方面:添加水量分別為2、3、3.5及5%;攪拌溫度為40、50、60及70℃;攪拌時間為20、30、及40分鐘,進行脫膠。結果顯示,以添加水量3%,溫度60℃,時間20分鐘為最適當之脫膠條件,其膠量達7.8%,而油中磷脂含量由原油的8039ppm降至669ppm。起泡高度由32個降至0cm.發煙點由206℃升高至224℃。在水洗方面:添加水量分別為10、20、30、及45%;攪拌溫度分別為70、80、及90℃,攪拌時間為20、30及40分鐘等不同條件進行水洗。自結果顯示,以添加水量20%,水洗溫度90℃及水洗時間20分鐘為最適當之水洗條件,其除去膠量達8.0%,油中磷脂含量為669ppm.起泡高度為0cm.發煙點為224℃,因此水洗處理也具有脫膠之效果。 另外,以通入蒸氣進行脫膠﹒結果以通入蒸氣2分鐘 (油中之水量7.5%) 其脫膠效果較好。而在添加脫膠劑進行脫膠方面,以分別添加檸檬酸0.2%.磷酸0.3%或檸檬酸0.2%和磷酸0.1%混合之脫膠效果較佳。 |
英文摘要 | The peanut oil was treated by different degurnmed and water washing, respectively. Thebest conditions were summarized as follows; The results for the degumming showed that the best conditions were: adding water amount for 3%, temperature was 60 ℃, and time was 20 minutes. The degummed amount was 7.8% and the residue phospholipid was decreased form 8039 ppm to 669 ppm the foarning height was decreased form 32 cm to 0cm. The smoking point was increased form 206 ℃ to 224 ℃. The rsults fur the water wshing showed that the best conditions were: adding water amount for 20%, temperature was 90℃, and time was 20 minutes. The degummed amount was 8.0% and the residue phospholipid in the oil was 669 ppm. The foaming height was 0 cm. The smoking point was 224 ℃. Hence it appears that the water washing processing a1sohad the degummed effects. The degumming of roasting peanut oil by steam degummed with 2 mins (water amount was 7.5% in oil) had the best degurnmed effects. Andthe best degurnmed effects for the degummed agemts were citrec acid 0.2%, phosphoric acid 0.3%, and the mixture agent of phosphoric acid 0.1 % with citric acid 0.2%, respectively. |
