中文摘要 | 在以往的研究中發現炸油餵食時,會降低飲食中脂質之吸收率,亦會使老鼠血漿中及組織中α-生育醇(α-Tocopherol,α-TOH)之含量降低。本研究之目的即在探討餵食炸油對老鼠體脂質代謝之影響,及血漿中α-TOH含量之降低是否與血漿脂質之變化有關。將新鮮黃豆油在200±5°C下,油炸馬鈴薯條,每日連續油炸6小時,連續炸四天,以此作為實驗用油(Oxidized frying oil,OFO)。以活性碳來吸取新鮮黃豆油中之維生素E後作為對照用油。將試驗用炸油及對照用油分別以15重量比混入含20蛋白質之無維生素E純化飼料,且各添加50mg All-rac-α-Tocopheryl acetate/kg,分別餵養剛離乳Long-Evans雄鼠6週。結果顯示,餵食炸油飼料之老鼠,血漿三酸甘油酯顯著降低,為對照組的76 (p<0.05),而膽固醇、磷脂質及總脂質之含量則與對照組沒有顯著差異。利用超高速離心分離出不同密度之各血漿脂蛋白,炸油組之VLDL中三酸甘油酯、膽固醇、磷脂質及LDL中三酸甘油酯亦顯著低於對照組(P<0.05)。炸油鼠肝與血漿中亞麻油酸含量低於對照組,肝中三酸甘油酯濃度亦約只有對照組之半。同時於炸油餵食鼠的VLDL及HDL中之α-TOH亦均顯著低於對照組(P<0.05)。血漿α-TOH/三酸甘油酯之比例,炸油組仍比對照組顯著降低,顯示炸油鼠血漿中α-TOH之降低並非完全因三酸甘油酯降低所致。 |
英文摘要 | Lower plasma and tissue α-tocopherol has been observed in rats fed a dietcontaining 15 oxidized frying oil (OFO). This study was conducted to examinethe change in lipid metabolism and to evaluate the involvement of this change inthe alteration of tissue vitamin E in rats fed an oxidized frying oil containingdiet. Two groups of Long-Evans male weanling rats were respectively fed theOFO diet which contained 15 OFO or the control diet in which the OFO wasreplaced by vitamin E stripped soybean oil. The OFO was prepared by deepfrying potato sticks in fresh soybean oil at 200±5°C for four 6-hour periods.After six weeks of feeding, the plasma triglyceride concentration of rats fed theOFO diet was 74 that of the control rats (p<0.05). Among the lipoprotein fractions, the VLDL of the OFO group contained significantly lower triglyceride,cholesterol and phospholipid. The triglyceride concentration of LDL from OFOrats was also significantly lower than that of the control rats (p<0.05). Thelinoleic acid level was significantly lower in plasma and liver of OFO rats than inthose of the control rats. Moreover, the hepatic triglyceride level of the OFOgroup was only less than 50 that of the control p<0.05). The resultssuggested that the endogeneous lipogenesis in the liver and VLDL triglyceridesecretion might be lowered in rats fed the OFO diet. On the other hand, thelower levels of α-tocopherol/lipid ratio in plasma of the OFO rats indicated thatthe reduced vitamin E status can not be completely attributed to the alterationof lipid metabolism in OFO rats. |
