中文摘要 | 本試驗所使用之楊桃樣品計有甜味種35種,酸味種10種,包括5種發酵 與5種未發酵者。全部樣品均於1990年採收,除了一次在3月27日採收外,其餘均 在盛產期10月及11月採收。分析之結果列如表二至表八。分析項目計有PH、糖度、 可滴定酸度、總磷、比重、甲醛態氮、灰分、揮發性酸、顏色及胺基酸含量共十 項。胺基酸則以分佈類型(distribution pattern)及總含量表示,可供檢驗楊桃果汁真 實性之商品標準依據,楊桃果汁中主要游離胺基酸種類為天門冬胺酸 (Asparticacid),絲胺酸(Serire) ,�k胺酸(Glutamic acid),羥丁胺酸(theronine),甘胺 酸(Glycine)及氨(NH��)等六種,共佔總胺基酸含量之73.6,但品種及樣品間仍有 相當之差異。 |
英文摘要 | In this experiment's sweet varieties and 10 tart variesties ofcarambola fruits were used as analytical fruit juice samples forestablishing the base data of inspection standard. All fruit sampleswere collected in the main production area season, October andNovember, 1990 except some from March 27. 1990. The analytical dataare shown in Table 2 to table 8 with 10 quality items such as pHvalue, soluble solids, titratable acidity, total phosphorus, specificgravity, fromaldehyde nitrogen, total ash, volatile acid, fruit juice color, total asino acid content, and individual free amino acid concentwere determined. 6 main Kinds of free amino acids with asparticacid, serine, glutamic acid, threonine, glycine and NH��. All analyticaldata include average, standard deviation, maximum and minimum areshown in details will be availablel for reference to the inspectionstandard of commerical carambola fruit juice. |
