中文摘要 | 從本省主要花生原料產地,配合其收穫期,以縣為單位,就1988年產落 花生,依春、秋二作及其在各地分佈情形,分別採集主要花生品種數種,測定其 剝實率、百莢重、百粒重,及一般成份包括水分、粗蛋白質、粗脂肪、粗纖維、 灰分與醣質等,以瞭解台灣產落花生之基本特性。結果發現台灣產各種花生之剝 實率平均為74%(春秋豆各為75與73)、百莢重平均為118.8克(春秋豆分別為128 克與111.5克)、百粒重平均為48.4克(春秋豆各為53克與43.8克),其彼此之間 僅百莢重與百粒重有相關性(r=0.918)。至於品質成分;水分之平均含量為7.12(春 豆7.16,秋豆7.07)粗蛋白質含量為平均26.53(春豆27.03,秋豆26.02),但台南選 9號之蛋白質量春豆高於秋豆約2.35,台南11號則春豆高於秋豆約1;就品種而言, 春豆以台南10號(29.8)最高,秋豆以台農4號(30.8)最高。粗脂肪含量平均47.6%, 春豆略高於秋豆但非常相近,春豆平均48.2,秋豆平均47.0。春豆之脂肪較秋豆 多1.2。粗纖維含量平均1.83,春作平均1.84、秋作平均也為1.84。醣質之 平均含量為14.04春作平均含量為12.54、秋作花生較高平均為15.53。至於灰分含 量平均為2.77,春豆差異較大,介於2.58~3.97丸之間,平均3.00;秋豆為2. 02~2.92,平均2.54。 |
英文摘要 | Sample of peanuts, both Spring and Fall, collected from the major peanutproduction areas of Taiwan from July 1988 to June 1989, were assayed for shelledkernel, weight per one hundred pods (WHP), Weight Per one hundred Kernels(WHK.) and general composition including moisture, crude protein, crude fat, crudefiber, ash and nonfibrous carbohydrate. Test results of physical characteriticsshowed that the shelled kernel percentage ranged from 73.0 ~ 75.0; WHP rangedfrom 111.5 ~ 128 gram; WHK ranged from 43.8 ~ 53.0 gram. WHP and WHKweight were observed to be highly correlated (r = 0.918). The results of analysis ofpeanut material quality showed that the average moisture content was 7.12,crude protein was 26.53. The protein level of Spring peanut Kernels of Tainanselected No. 9 was 2.35 higher than that of Fall's, the average crude protein level ofSpring peanut Kernels of Tainan No. II was 1 higher than that of Fall's and thehighest level of crude protein was Tainan No. 10 (29.8) in Spring crop and TainungNo. 4 (30.8) in Fall crop respectively. The crude fat content was 48.2 of Springpeanuts and 47.0 of Fall peanuts.The crude fiber content was 1.84 of Spring peanuts and also 1.84 of Fallpeanuts and the nonfibrous carbohydrates (N.F.E.) content was 12.54 of Springpeanuts and 15.53 of Fall peanuts. Fall peanuts had higher N.F.E. 2.99 than that of Spring's. The content of ash of Spring peanuts ranged from 2.58 ~ 3.97 and Fall peanuts ranged from 2.02 ~ 2.92. |
