| 中文摘要 | 本研究乃探討不同品種之肉鷄在不同飼養階段的生長效率、屠體品質及鷄肉風味的差異。結果顯示,童子鷄飼養超過8週,仿士鷄超過10週,土鷄超過14週以後,增重速率及飼料效率(增重/飼料)均有顯著降低之趨勢(P<0.05)。 童子鷄之屠體、腹脂及胸肉百分率,在不同飼養階段均高於仿土鷄及土鷄。16週齡之各品種母鷄腹脂及腿肉脂肪含量均顯著高於公鷄(P<0.05)。此外,發現腿肉比胸肉均含有較高之脂肪,使得腿肉在品評試驗之多汁性及可接受性評分均比胸肉高。品評試驗係以12位品評員進行4次品評試驗,樣品肉以2%食鹽煮沸20分鐘,品評項目包括肉香,肉味,韌度,纖維感,多汁性,可接受性及嚼數等,結果顯示,延長飼養期使腿肉之韌度、纖維感及嚼數增加,而多汁性及可接受性則降低,但是胸肉之品評結果,則無顯者差異。 |
| 英文摘要 | The purpose of this experiment was to investigate the differences of growth efficiency, carcass quality and product acceptance among three different meat-type chickens. The results indicated that the growth rate and feed efficiency declined when broiler, simulated-country chicken, and country chicken were raised over 8 weeks, 10 weeks, and 14 weeks, respectively. The carcass dressing percentage, abdominal fat pad and breast meat percentage were higher for broilers than the other two types of chickens at 8, 12 and 16 weeks of age. At 16 weeks of age, the female chickens had higher abdominal fat and fat content of thigh meat than the male chickens. Thigh meat was found to have higher fat content than breast meat for all kinds of chickens. The panel taste indicated that prolonging the raising period did increase the toughness, fibrous and chew count scores, and decrease the juiciness and acceptance score of the thigh meat. However, the breast meat was not influenced. |
