中文摘要 | 每年因賣相不佳而被淘汰扔進垃圾桶的醜蔬果高達上億噸,造成食物浪費。為減少食物浪費,對消費者的醜食認知與行為進行瞭解有其必要性,以作為推動醜食教育的參考。而飲食教育應從小扎根,因此,本研究調查小學生對醜食的認知與接受度,以及了解小學生接受醜食的影響因素。採問卷調查法,抽樣方式採分層比例抽樣,獲得小學生有效樣本474人。根據資料分析,獲得主要結果如下:小學生對醜食的認知、態度與接受度都不足,對醜食的主觀規範與知覺行為控制不佳;而影響小學生醜食接受度的關鍵因素依序為醜食的知覺行為控制、態度、醜食認知、主觀規範等。最後,根據研究結果對醜食教育推廣實務及後續研究提出建議。 |
英文摘要 | The ugly fruits and vegetables that are thrown into the trash every year are as high as 100 million tons, causing food waste. In order to reduce food waste, it is necessary to understand consumer's ugly food cognition and consumption behavior as a reference for promoting ugly food education. Food education should be rooted at a young age. Therefore, this study investigated the pupils' perception and acceptance of ugly food, and explored the factors influencing the pupils' acceptance of ugly food. A questionnaire survey method was adopted. The sampling method was stratified and proportioned. 474 valid samples were obtained. According to the data analysis, the main results are as follows: Pupils' perceptions, attitudes, and acceptance of ugly food are inadequate, and the subjective social norms and perceived behavior control of ugly foods are not well posessed; and the key factors that affect the acceptance of ugly food by primary school students are: perceived behavior control, attitude, cognition of ugly food, subjective social norms, etc. Finally, according to results, the promotion practice to ugly food education and future research suggestions are proposed. |
