中文摘要 | 本研究以反應曲面法探討應用微波輔助萃取昆布所得萃取物之自由基清除及亞鐵離子螯合能力的影響,並找出最適處理條件。採用三階層三因子之實驗設計,獨立變數分別為昆布粉末顆粒大小(X1)、昆布濃度(X2)、與萃取溶液乙醇含量(X3)。DPPH自由基清除效應和亞鐵離子螯合能力主要受到昆布粉末顆粒大小(X1)與萃取溶液乙醇含量(X3)的顯著影響。而DPPH自由基清除效應和亞鐵離子螯合能力的反應曲面模型的決定係數(R^2)均達到0.99以上。最適之處理條件為使用57-66篩網大小得到之昆布粉末顆粒,添加1.5%昆布濃度及應用70-90%乙醇水溶液進行萃取操作。 |
英文摘要 | The optimum treatments of Ecklonia (E.) kurome extract were studied using the response surface methodology, and pulsed microwave-assisted extraction technique was applied in this study. The study was performed using a three-level, three-factor design aimed at determining the optimum combinations of mesh pore size of E. kurome particle (X1), concentration of E. kurome extract (X2), and ethanol percentage (X3). The response variables of the DPPH radical scavenging effect and ferrous ion chelating capacity were significantly affected by mesh pore size (X1) and the ethanol percentage (X3) at a significance level of 5%. The coefficients of determination (R^2) of the response surface models of the DPPH radical scavenging effect and ferrous ion chelating capacity were found to be above 0.99. In this study the optimum treatments were established using the highest concentration of E. kurome extract 1.5% with an ethanol percentage range of 70-90% and 57-66 mesh pore size. |
