中文摘要 | 本研究乃在探討不同加熱溫度與時間對黃麴毒素B1熱破壞程度之影響。實驗採反應曲面法(response surface methodology)之二變數(加熱溫度、時間)、五層階(two variables-five levels)設計,反應性狀則為毒素加熱破壞後之殘存濃度。由所得之結果,發現加熱溫度與時間二者對殘存濃度之整體總合作狦均具顯著性。由等性狀曲線圖發現,在205-220℃, 29-42 min之加熱條件範圍,可得到零錢存值,且經應證實驗證實所得反應性狀之模式方程式十分適當。 |
英文摘要 | The objective of this research was to study the thermal destruction of aflatoxin B1 by using the method of two variables-five levels designed response surface methodology. Process variables included temperature and time, and the response variable was the residual concentration of aflatoxin B1. Result showed that the overall effect of the combination of temperature and time was significant. The residual value of the toxin was zero under the conditions of 205~220℃ and 29-42 min. The model function was adequate as verified using t-test on the predicted and experimental values. |
