中文摘要 | 本研究以反應曲面法探討應用微波輔助萃取紫菜所得萃取物之自由基清除及亞鐵離子螯合能力的影響,並找出最適處理條件。採用三階層三因子之實驗設計,獨立變數分別為紫菜粉末顆粒大小(X1)、紫菜濃度(X2)、與萃取溶液乙醇含量(X3)。DPPH自由基清除效應和亞鐵離子螯合能力主要受到紫菜粉末顆粒大小(X1)與萃取溶液乙醇含量(X3)的顯著影響。而DPPH自由基清除效應和亞鐵離子螯合能力的反應曲面模型的決定係數(R2)均達到0.94以上。最適之處理條件為使用65-75篩網大小得到之紫菜粉末顆粒,添加1.5%紫菜濃度及應用 10-30%乙醇水溶液進行萃取操作。 |
英文摘要 | The optimum treatments of Porphyra (P.) dentate extract were studied using the response surface methodology, and pulsed microwave-assisted extraction technique was applied in this study. The study was performed using a three-level, three-factor design aimed at determining the optimum combinations of mesh pore size of P. dentate particle (X1), concentration of P. dentate extract (X2), and ethanol percentage (X3). The response variables of the DPPH radical scavenging effect and ferrous ion chelating capacity were significantly affected by mesh pore size (X1) and the ethanol percentage (X3) at a significance level of 5%. The coefficients of determination (R2) of the response surface models of the DPPH radical scavenging effect and ferrous ion chelating capacity were found to be above 0.94. In this study the optimum treatmentswere established using the highest concentration of P. dentate extract 1.5%with an ethanol percentage range of 10-30% and 65-75 mesh pore size. |
