中文摘要 | 1992年2月台灣高雄地區曾發生因食用鱠魚(Cephalopholis boena)肝臟而發生類似維生素A過量症之中毒案例,因此為了解台灣產魚貝類之維生素A含量,乃主要自基隆地區漁市場收集33種魚貝類和自高雄地區採集鱠魚(C. boena)肝臟,經抽油後,利用高效能液態層析儀分析法測定維生素A之含量,得知在海水魚之維生素A含量,以鯊魚(Hemitriakis japonicus)肝臟之15846 ± 3158IU/g (mean ± S.D.)為最高。淡水魚類肝臟中之維生素A含量,則以鰻魚(Anguillajaponica)肝臟之1597 ± 185IU/g為最高。軟體動物可食部之維生素A含量則普遍甚低。而鱠魚(C. boena)肝臟之維生素A含量平均則為15440 ± 6031IU/g。 |
英文摘要 | Food poisoning incident of hypervitaminosis A-like due to ingesting the liverof a grouper Cephalopho Us boenak with drinking wine occurred in February 1992 in Kaohsiung County. To investigate the level of vitamin A in Taiwanese fish,the fishes were mainly collected from markets at Keelung City and the grouper(C. boenak) liver was collected from Kaohsiung County. The level of vitamin Ain the liver and/or muscle was analyzed by high performance liquid chromatography (HPKC). It was found that level of vitamin A in shark Hemitriakis japonicus) liver was the highest (15846 ±3158 IU/g, mean i S.D.). The average levelof vitamin A in the grouper (C. boenak) liver was 15440 ± 6031 IU/g. Among freshwater fishes, the level of vitamin A in eel (Anguilla Japonica) liver is thehighest (1597 ± 185 IU/g). The level of vitamin A in mollusks was generally low. |
