中文摘要 | 綠茶屬於未發酵茶,其總兒茶素含量是各種茶類中含量最高的。在這134種兒茶素中,茶葉中以益多酚(EGCG)的含量最高,約佔總兒茶素的50%以上,也最具有生物活性。益多酚是兒茶素中抗氧化能力最高的一種,除了可以有效消除自由基及抗老化以外,益多酚對於降體脂肪、降低心肌梗塞的危險、減少動脈管壁鈣化皆有可靠的科學根據。益多酚可以誘導許多不同腫瘤細胞進行自體凋亡(Cell Apoptosis)、抑制腫瘤細胞生長及轉移,另外益多酚也具有降血糖、消除口臭、抗發炎、抗HIV病毒生長及預防阿茲海默症及帕金森氏症的可能性,所以以益多酚為訴求的茶飲料更具有保健的功能。為配合台灣中油加油站通路及因應本公司中油生技產品多元化的需求,著手開發具有機能性綠茶飲品,經過實驗室配方調配及修改、品評試驗、工廠小規模試俥及綠茶安定性試驗後,於2012年9月正式生產第一批益多酚頭等茶同時開始對外販售。除了確保綠茶符合衛生福利部食品衛生管理法飲料類衛生標準外,本研究針對本公司開發出的綠茶產品「益多酚頭等茶」,量測綠茶於不同儲存溫度及儲存位置(陽光照射與否)對產品安定性的影響(酸鹼值、可溶性固形物、綠茶顏色變化及益多酚含量變化等),並探討不同萃茶設備所生產綠茶產品於儲存過程中的顏色與益多酚含量變化,另外針對綠茶開瓶後顏色變化與市售綠茶做綜合性評估與比較(包括益多酚與咖啡因含量),結果顯示(一)綠茶顏色及益多酚含量於儲存過程中受儲存溫度影響最為敏感,高溫下(40℃)綠茶變色程度嚴重同時益多酚嚴重降解,低溫儲存下變色與益多酚含量穩定,(二)綠茶顏色及益多酚含量變化受陽光照射與否不明顯,因為PET瓶採用綠色瓶同時套標完全,可以有效隔離紫外線的照射,(三)密閉式萃茶設備能比開放式萃茶桶得到較高的益多酚含量,但密閉式萃茶設備所製造的綠茶顏色變化(不論是未開瓶或開瓶後)及三個月益多酚降解情形都比開放式萃茶桶所製造的綠茶較為嚴重,這顯示開放式萃茶桶所製造的綠茶於產品的穩定度較佳,(四)綠茶變色程度與市售暢銷綠茶相似,也顯示出綠茶變色問題的困難之處,(五)益多酚頭等茶EGCG含量適中且咖啡因含量為市售綠茶產品中最低,兼具解渴及保健效果。此研究的結果能有效提供綠茶產品的儲存、運送及行銷的科學化參考依據,並提供日後申請健康食品認證功效與安定性實驗的參考。 |
英文摘要 | Green tea is a non-fermented tea, and contains more total catechins than others. EGCG is the most abundant (~over 50%) and biologically active polyphenol in green tea. The strong antioxidant potential of catechins, and especially EGCG, are widely demonstrated in vitro and in animal studies. In addition, catechins possess antimutagenic, antidiabetic, anti-inflammatory, antibacterial, antiviral and the prevention of Alzheimer's and Parkinson's diseases properties. Therefore, bottled green tea beverages with EGCG are health-promoting. In this study, we measured the stability of green tea products under various processing (tea extract equipment) and storage conditions (storage temperatures and sunlight exposure). Our results showed that (a) green tea catechins degradation and color changes are most sensitive at high temperature. Low temperature storage minimized the degradation of tea catechins, (b) green tea catechins degradtion and color changes by sunlight are not obvious because PET bottles can effectively prevent the ultraviolet radiation, and (c) closed tea extraction equipment can accumulate a higher EGCG content than the open one. However, the green tea color and EGCG content from the open tea extraction equipment are more stable. (d) it is a common issue for all commercial selling green tea products that the color of green tea extract tended to turn dark (browning). (e) Our green tea product contains moderate EGCG (2nd highest) and the least caffeine content among all the tested commercial products. The results of this study can effectively provide scientific references for green tea product storage, transportation and marketing. It also provided efficacy and stability references for healthy food certification in the future. |
