中文摘要 | 冬蟲夏草為東方人進補常用之中藥材,具有降低血糖、降低三酸甘油脂、降血壓、保肝、抗氧化、治療腎臟疾病等作用。乳酸菌目前已被科學界證實具有促進排便、改善腸道菌相、增加免疫系統功能以及降低膽固醇等功效。由於冬蟲夏草及乳酸菌具有多種功能性,本研究以冬蟲夏草醱酵菌絲體水萃出物製成乳酸菌醱酵飲料,分析其特性並進行嗜好性品評。本研究先以冬蟲夏草醱酵菌絲體水萃出液以及添加冬蟲夏草醱酵菌絲體水萃出液之MRS broth比較菌株生長狀況,結果顯示冬蟲夏草醱酵菌絲體水萃出液有增加乳酸產量之效果。再以冬蟲夏草醱酵菌絲體水萃出液添加碳源、氮源分析菌株生長情形,結果顯示冬蟲夏草醱酵菌絲體水萃出液應具有可使乳酸菌生長良好之營養成分。在應用方面,於豆奶牛奶混合液中添加冬蟲夏草醱酵菌絲體水萃出液時,亦有增加乳酸產量之效果,感官品評以添加1%之冬蟲夏草醱酵菌絲體水萃出液最佳,儲存期間亦可保持10□ CFU/mL的活菌。綜合本研究結果,添加冬蟲夏草醱酵菌絲體水萃出液於醱酵豆奶飲料中,一方面可發揮本身對人體的功能性,另一方面又可促進乳酸菌產生多量乳酸,且乳酸可促進腸道蠕動,增進健康,並可改善醱酵豆奶之整體接受性,且於儲存期間能保持高量活菌,未來可進一步由動物試驗本品之保健功效。 |
英文摘要 | Cordyceps sinensis is a traditional Chinese herb. It has been proposed to have multiple medicinal actvities. It had many important pharmacological activities in protecting lung and kidney funtion. Recent scientific evidences have shown that Cordyceps is capable of modulating immune response, inhibiting tumor growth, and improving hyperlipidemia, and hyperglycemia. In this study, we used the water extract of anamorph of Cordyceps sinensis as the meidiums and fermented by the lactic acid bacteria, Lactobacillus paracasei subsp. paracasei NTU101, isolated from infant in Taiwan. The results showed that anamorph of Cordyceps sinensis solution could increase the viable cells and raise the yield of lactic acid both in MRS broth or milk-soymilk mediums. So we supposed that anamorph of Cordyceps sinensis have some cofactor to improve growth of Lactobacillus paracasei subsp. paracasei NTU101. On the sensory tests, the milk-soymilk medium was supplemented with different proportion of anamorph of Cordyceps sinensis solution for fermenting by Lactobacillus paracasei subsp. paracasei NTU101. The mean scores of overall acceptability of 25% milk and 75% soymilk supplemented with 1% anamorph of Cordyceps sinensis solution is significantly higher than other samples. On the storage tests, all these fermented products could maintain the 10□ CFU/mL of viable cells after 14 day's storage period at 4℃. In this study, we demonstrated the lactic acid bacteria to ferment the Chinese herb, anamorph of Cordyceps sinensis, and it could improve the cell number and the production of lactic acid. It also provided a good flavor and appearance for fermented milk-soymilk product by lactic acid bacteria. |
