英文摘要 | Eight strains of Lactobacillus acidophilus namely, L. acidophilus AA, B62F14, J-5, J-8, LA-2, Lac-12, M-5 and NCFM were investigated for cholesterol reducing ability in vitro. All eight strains were grown in MRS media containing 2% pleuropneumonia-like organism (PPLO) serum fraction and 0.5% oxgall. Strains B62F14 and J-8 demonstrated the best cholesterol reducing ability at 66 and 63%, respectively. Strains AA, J-5 and Lac-12 were able to reduc approximately 50% of the cholesterol. After 24 hours of growth of NCFM and LA-2, approximately 20% of the cholesterol was reduced. L. acidophilus M-5 was the only strain that was unable to grow in the presence of 0.5% oxgall. When strains were tested in the absence of oxgall, J-8, B62F14 and M-5 were unable to reduce the cholesterol content of broth. The mechanism of the cholesterol reduction in the in vitro system was also studied. Cholesterol was coprecipitated with cholic acid, a deconjugated bile, at acidic pH. No coprecipitation was observed in the pressence of taurocholic acid. The coprecipitation of cholesterol with deconjugated biles contributed to the reduction of cholesterol levels; however, cholesterol was also reduced when taurochlic acid was used as the source of conjugated bile. This reduction is likely due to the assimilation of cholesterol by L. acidophilus cells. Therefore, the cholesterol reduction is due to both bacterial assimilation and precipitation of cholesterol. |
