中文摘要 | 為瞭解脂質對雄性大白鼠之血脂質及肝脂質之影響,本研究將新鮮蛋黃置於260℃電熱板加熱24小時製得高溫煉製蛋油(HTEO),將試驗老鼠隨機分為basal+0.2% cholester(CHOL),basal+2% HTEO(HTEO2),basal+4% HTEO(HTEO4), basal+2% EPL(EPL2)及basal(對照組)等五組,調整P/S=1,脂質含量為10%,均以自由給食方式飼養150g Wistar品系大白鼠六週。結果發現各試驗組其肝臟佔體重百分比均顯著較對照組高,約高8.27%~29.06%,但攝取含HTEO組飼料組其肝體比則比含CHOL及EPL2飼料組均顯著低,約低9.09~16.12%;血漿脂質顯示,攝取含HTEO飼料之老鼠,其LDL-C顯著比對照組高,LDL-TG則顯著較低;肝臟脂質顯示,攝取含HTEO飼料組均顯著有較高總膽固醇,較低總三酸甘油酯之現象;肝臟脂肪酸組成則顯示攝取HTEO飼料組具較高之14:0、16:1、18:1及18:2,然而18:0、20:4及22:6則顯著較低,糞便固醇含量顯示,所有試驗組均顯著比對照組高,整體而言,高溫煉製蛋油會改變大白鼠血漿及肝臟脂質組成,使血漿LDL-C及肝臟膽固醇上升,但可降低肝臟TG。 |
英文摘要 | To investigate the effects of the lipid metabolism in rats, fresh egg yolks were heated to 260℃ for 24 h to produce high-temperature heated egg yolk oil (HTEO). Five groups of male Wistar rats were separately fed the following diets: basal (control), basal + 0.2% cholesterol (CHOL), basal + 2% HTEO (HTEO2), basal + 4% HTEO (HTEO4), and basal ﹢2% egg phospholipids (EPL2). Total lipid contents in all diets were kept at 10% with a P/S ratio of 1 by varying the amounts of lard, soybean oil, and egg oil. Rats were fed these diets ad fib/turn for 6 weeks. The results showed that the liver to body weight ratio of all treatment groups significantly increased when compared to the control, but the groups with HTEO showed a lower ratio than the CHOL and EPL2 groups. In the plasma, values of LDL-C were significantly higher and values of HDL-TG were lower for the two HTEO groups. In the liver, diets containing HTEO produced significantly higher values for total cholesterol, but showed lower values for total TG. The fatty acid composition of the liver was also changed by the addition of HTEO (higher in the 14:0, 16:1, 18:1 and 18:2, but lower in the 18:0, 20:4, and 22:6). All experimental groups had higher fecal sterol concentrations. In conclusion, this study showed that supplementation with HTEO changed the composition of plasma and liver lipids in rats. |
