中文摘要 | 從養殖之草蝦(Penaeus monodon)中所選出的樣品來分析其不同組織中類胡蘿蔔素之 含量並決定其與蝦大小、性別、及脫殼週期之關係。在0.4-2.8克範圍內,類胡蘿蔔素含量隨 蝦重顯著地下降。肝臟、頭、肉、及殼類胡蘿蔔素含量並不因蝦之性別而有顯著差異。對於 脫殼週期,以溼重為基準,頭、肉及殼之類胡蘿蔔素含量在 D期最高,B期最低,且其有顯 著差異。然而以乾重為基準,僅殼之類胡蘿蔔素含量在D期顯著地高於B期。因此,頭及肉 之類胡蘿蔔素含量不僅受到脫殼週期且受到水含量之影響,而殼之類胡蘿蔔素含量主要受到 脫殼週期之影響。 |
英文摘要 | Cultured Penaeus monodon were sampled and analyzed for the carotenoid content in various fissues to determine the relationships between the carotenoid contents sizes, sexes, and molting stages. Carotenoid content decreased significantly with shrimp weight in range of 0.4-2.8 g. There were mp significant differences between sexes in carotenoid content in hepatopancreas, head, flesh, and shell. For the molting stages, in wet weight base the carotenoid contents in head, flesh, and shell were highest at D stage and lowest at B stage and there were significant differences between these two stages. However, in dry weight base only in shell the carotenoid content was significantly higher at D stage than at B stage. Therefore, carotenoid contents in head and flesh were affected by not only the molting stages but the water content and carotenoid contents in shell were affected by mainly the molting stages. |
