中文摘要 | 為明瞭Nitrofuran誘導體之一種,[2-(2-furyl)-3-(5-nitro-2-furyl) acryl amide](FF)及 NaHSO3,Na2B4O7對於蝦之保鮮及黑變防止效果,實施試驗得到下列結果: (一)以FF粉末添加魚蝦肉,或以FF solu' 浸漬蝦體,可延長保鮮時間,較Control區其VBN 之生成量可抑制在約?之數值以下,而效果與同一濃度之CTC略同。 (二)使用FF的缺點是可使蝦體帶黃色,此種現象似與本試驗所用FF(0.1~0.05%)過多有關,得略予減低,對於效果似無影響。 (三)蝦的黑變防止,在水藏法中可採用NaHSO3及Na2B4O7之撒佈方法,操作簡單,可避免浪費,尤以前者之效果為佳,經實地應用結果可完全抑制黑變之發生。 (四)FF 與NaHSO3及Na2B4O7 併用於蝦之保鮮,除可延緩黑變之發生外,對於抑制VBN生成亦有效。 (五)蝦肉中之VBN與pH之相關係數,r = 0.545,兩者之相關並未密切。 |
英文摘要 | In order to understand the efficiency of one of the Nitrofuran derivatives FF 2-(2-furyl)-3-(5-nitro-2-furyl) acryl amide and NaHSO3, Na2B4O7 for keeping fresh quality and preventing from blackening respectively. We do this experiments and the conclusion to be drawn from experiments as show below: 1. Scatter the FF powder to shrimp meat or submerge the shrimp to FF solu' can extent the storage life and the amount of VBN compare with the control division the former are less 2/3 than the latter, and it shows as efficiency as the same concentration of CTC. 2. The FF division shows one shortcoming to have yellowish meat it may be caused by the over prescriptions (0.1-0.05%) if reduce the prescriptions the efficiency may be the same. 3. Shrimp blackening during ice storage may scatter NaHSO3 or Na2B4O7 powder to restrict it. The operation is simple and can aviod the wastage too. The efficiency of both the former are better than the latter. The conclusion to be drawn from practic operation experiments the former can restrict blackening complete. 4. Combination use of FF and NaHSO3 or Na2B4O7 for keeping fresh quality besides restrict blackening the results are observed. They can restrict the formation of VBN too. 5. The coefficient of correlation of VBN and pH of shrimp meat r=0.545, it indicate the relaiton is weakness. |
