中文摘要 | 本研究主要利用經修正Gompertz模式來預測於不同包裝雞肉中李斯特菌之生長。並藉由模式於所選取之溫度(10、16、22、28、30及37℃)下估計其生長參數,如最大菌數量、最大比生長速率及遲滯期(A、μm及λ)。該菌之生長之參數與溫度之相關性則分別利用多項式、Zwietering模式及Adair模式描述之。實驗結果顯示於不同包裝雞肉中李斯特菌之生長可利用Gompertz模式加以配適,其迴歸係數可達0.98。李斯特菌於本研究所使用之溫度範圍(10-37℃),其最大菌數量於一般包裝雞肉中約為1010CFU/g,其於調氣包裝及真空包裝雞肉之最大菌數量則均約為108CFU/g。以Zwietering模式及Adair模式分別配適李斯特菌於雞肉中其最大生長速率及遲滯期之迴歸係數可達0.97及0.98,可適切描述雞肉中李斯特菌之最大生長速率及遲滯期,經F test檢定雞肉中李斯特菌於三種包裝中之最大比生長速率(μm及λ)及遲滯期之差異,結果顯示調氣包裝可顯著降低該菌於雞肉中之最大比生長速率及延長期遲滯期(p<0.05)。 |
英文摘要 | The modified Gompertz function was used to predict the growth of Listeria monocytogenes Scott A in chicken meats. L. monocytogenes was inoculated into food samples, followed by incubation at 10, 16, 22, 28, 30 and 37℃. After the growth curves of the pathogen at the above temperatures were obtained, the modified Gompertz function was then fitted to the experimental curves. The variations of the parameters A (the asymptotic value of the stationary growth phase), μm (the maximum specific growth rate), and λ (lag phase) could be described by the polynomial model, Zwietering model and Adair function, respectively. The r-value of the Gompertz model was 0.98, indicating that the function is suitable for describing the growth pattern of L. monocytogenes in chicken meat. The number of L. monocytogenes was ca. 1010 CFU/g when the chicken was packaged without vacuum and incubated at temperatures between 10 and 37℃; on the other hand, 108 CFU/g of L. monocytogenes was found in MAP and vacuum packaged samples in the same temperature range. The Zwietering and Adair functions, with the r-values of 0.97 and 0.98, respectively, were found to be suitable for predicting the μm and λ parameters of the L. monocytogenes in the chicken meat. The results of F test show that the μm parameters of L. monocytogenes in chicken meat was significantly decreased in MAP samples (p<0.05); in addition, λ was found to be significantly increased under the same conditions (p<0.05). |
