中文摘要 | 為模擬無菌加工之歐姆加熱時食品受熱情形,以商業化套裝軟體ANSYS可以求解兩相靜止系統中的電壓與溫度場。結果顯示,現有商業化歐姆加熱器之設計配置,對均相液體加熱時,除在管徑變化處存在少數局部較高溫區域外,大致昇溫均勻。對含有與液體導電度不同之固形顆粒之異相系統加熱時,則受顆粒所處位置與含量之影響。模擬馬鈴薯懸浮於硫酸鈉溶液系統之加熱時發現,顆粒之受熱極不均勻且最高與最低溫皆處於同一軸向平面上。顆粒內部之溫度分佈在邊緣產生明顯的溫度梯度,介於固體間之液體升溫亦受此影響而變化顯著。隨著徑向斷面顆粒佔據面積愈大,此現象愈為嚴重。直到完全由顆粒佔據時,顆粒昇溫速率轉而大於液體部分並與歐姆定律之預測吻合。 |
英文摘要 | The commercial software package ANSYS could be used to calculate the voltage and temperature distribution in static ohmicly heated food containing heterogeneous particulates and to simulate the heating effect in aseptic processing. The simulation results showed that the configuration of a commercial or pilot scale ohmic heater would heat up a homogeneous liquid uniformly except in some small high temperature regions where the lumen size changed. The heating results of suspension containing particulates was function of particulate location and concentration when electrical conductivity differed from phase to phase. Simulatoin results of heating potato in sodium sulfate solution showed significantly non-uniform heating within particles, and it was found that the system maximum and minimum temperatures were located on the same axial plane. A steep temperature gradient was found in the peripheral region of the particulate and liquid zones between solids. The gradient increased when the cross sectional fraction was increasingly occupied by the particulates. Particulates heated up faster than liquid when the cross-section area was totally occupied, which agreed with the prediction based on Ohm's law. |
