中文摘要 | 龍眼乾剝肉加工是一項高難度的作業,欲達到完全剝肉目標,剝肉機構之設計須 配合最佳剝肉含水率之探討,剝肉機包括進料裝置、定位機構、剝肉機構、出料機構、傳動 機構、機架等部分。 由試驗顯示:( 1 )剛烘焙加工後的龍眼乾肉平均含水率約為 29.3% ,市場銷售的龍眼乾肉平均含水率約為 32.1%。 ( 2 )利用影像處理設備量測結果,龍眼 乾果粒長軸平均長度為 20.86mm,短軸平均長度為 19.03mm,周邊平均長度為 68.87mm,平 均投影面積為 324.93 mm �插A平均細密度為 14.60。( 3 )龍眼乾貯放一週後果肉含水率 為 29.9%,貯放八週後含水率為 35.2%,含水率平均增加 5.3%。( 4 )剝肉效率以含水率 30% 為佳,其剝肉效率約為 68%,此乃因龍眼乾果肉含糖量高且富黏性,果粒定位不易,定 位機構有待改良設計。 |
英文摘要 | The peeling of longans is a difficult process. Peeling at optimum moisture of longans is necessary in order to reach the goal of complete peeling. The peeler containes the following device: feeding device, fixed device, peeling device, exit device, transmission, and flame. The moisture content of flash dried longans was 29.3%; the moisture content of market dried longans was 32.1%. With image measurement device, the physical properties of the dried longan were found as average major axis length 20.86 mm, average minor axis length 19.03 mm, average peripheral length 68.87 mm, average projected area 324.93 mm��, average fine density 14.60. The moisture content was 29.9 % after storing one week. 35.2 % after storing 8 week, an increase of 5.3 %. The flesh-peeling result is the best when the moisture content was 30 %, with an efficacy of 68 %. High sugars-content will increase the adhesion and influence the peeling efficiency. The peeling installation setting device needs farther improvement. |
