中文摘要 | 龍眼乾剝肉加工是一項高難度的作業,欲達到完全剝肉目標,龍眼乾物性之探討,將有助於剝肉機構之改良與研製,為了改善剝肉效果,在果粒定位機構做局部果肉剝離,再以擠壓式剝肉機構進行剝肉。由試驗顯示:(1)利用影像處理設備量測龍眼乾果粒之幾何形狀得知,龍眼乾果粒長軸平均長度為21.48 mm,短軸平均長度為19.66 mm,平均周邊長度為69.24 mm,平均投影面積為325.32 mm²,平均細密度為14.81。(2)果核抗壓試驗,得知果核直徑為12 mm時,最大壓力為3.31 kg、果核直徑為14 mm時,最大壓力為4.56 kg、果核直徑為16 mm時,最大壓力為4.68 kg。(3)果肉拉力試驗,龍眼乾果肉厚度0.5 mm,當拉力平均達0.206 kg時果肉被拉斷,果肉厚度1 mm,當拉力平均達0.617 kg時果肉被拉斷。(4)剝肉試驗,龍眼乾果肉含水率30%,其剝肉效果為76.6%,含水率32%,剝肉效果為66.6%,含水率34%,剝肉效果為55%。 |
英文摘要 | The Longan-peeling process is a difficult process. In order to reach the goal of flesh-peeling, to study the physical properties of dried Lognan fruit is able to improve to design the flesh-peeling device. In order to improve the efficacy of Longan-peeling, dried Longan was put into a dried Longan-fixed device, partial flesh-peeling was conducted first, and then compressed the flesh-peeling device to peel the Longan flesh. The present data have shown: (1) Image processing technigues were used to measure the geometric shape of the dried longans, average major axis length of 21.48 mm, average minor axis length of 19.66 mm, average peripheral length of 69.24 mm, average projected area of 325.32 mm², average compactness of 14.81. (2) The data of Longan seed compression test have indicated the maximum compression of Longan seed at the diameter of 12 mm, 14 mm and 16 mm were 3.31 kg, 4.56 kg, and 4.65 kg, respectively. (3) From the tension test of dried Longan, we found that the flesh would be pulled down when the thickness was 0.5 mm, the tension force reached 0.206 kg/s. When the flesh would be pulled down when the flesh thickness was 1 mm, the tension force reaches 0.617 kg/s. (4) In the flesh-peeling test, the moisture content of dried Longan was 30%, 32% and 34%, the efficacy of flesh-peeling rates were 76.6%, 66.6% and 55%, respectively. |
