中文摘要 | 探討不同加工條件在雙軸擠壓中,對組織化植物蛋白-素肉品質之影響。實驗結果顯示,進料水份、進料速率、螺軸轉速、第五與第六段套筒溫度,均會影響素肉品質。其中影響產品品質最大之子為進料水份。隨著進料水份含量的升高,產品固形物流失率、亮度(L值)與白色度(white index)有上升之趨勢。較佳之進料水份在32-34%之間,此時產品吸水率與抗壓強度較高,且固形物流失率較低。螺軸轉速在200至240rpm時,產品膨發率與抗壓強度較高。第五段套筒溫度愈高,固形物流失率愈低,吸水率則愈高。第六段套筒溫度愈高,吸水率與抗壓強度愈高。 |
英文摘要 | Using twin-screw extrusion of texturized vegetable protein, the effects of processing variables such as feed moisture, feed rate of raw material, screw speed, and the fifth and the sixth barrel temperature on extrudate properties, namely, cooking loss (CL), water absorption capacity (WAC), compression force (Comp. F.), puff ratio (PR) and color (Hunter's L, a, b values, and white index (W. I.), and total color difference), were studied. All the processing variables affected the extrudate's properties. The most effective factor was feed moisture. The higher the feed moisture, the higher the product's measured CL, L value and W.I.. The better feed moisture was 32-34%. In this range, the extrudate's WAC and Comp. F. were higher, and CL was lower. When the screw speed was 200-240 rpm, the extrudate's CL and Comp F. were higher. The higher the fifth barrel temperature, the lower the CL and the higher the WAC. If the sixth barrel temperature was higher, the WAC and Comp. F. were higher. |
