英文摘要 | The quality of Agaricus bisporus and A. bitorquis mushrooms irradiated for various amounts of time (0, 0.5, 1 and 2 h) with ultraviolet-C (UV-C) rays during storage at 12 ℃ was evaluated. UV-C irradiation caused a significant decrease in the microbial counts ofA. bisporus on the order of 0.49-0.58 log while no difference was found among the irradiated samples. However, after 6 days of storage, no difference was found between irradiated and control mushrooms. As the irradiation time was prolonged, the lightness (L) of A. bisporus decreased while the total color difference (△E) increased. During storage, L decreased and AE increased as a result of browning. During storage at 12 ℃, higher weight loss occurred in the A. bisporus irradiated with UV-C for 0.5 h. However, other postharvest measures, such as the maturity index, cap diameter and stipe length, did not significantly differ. The microbial counts of A. bitorquis irradiated with UV-C for 0.5 and 1 h did not decrease significantly while 2-h irradiation caused in microbial counts to decrease by 0.65 log. As the irradiation time was prolonged, the lightness of A. bitorquis decreased while,△E increased. During storage, the postharvest measures of A. bitorquis among the treatments did not significantly differ. |
