中文摘要 | 番茄常以堆疊裝箱的方式送至批發市場銷售,在室溫下貯存數天自然後熟,低層 的果實長期遭受負荷,造成果肉組織被破壞而降低其品質,經濟價值大為損失。本研究旨在 探討國產番茄之黏彈特性,藉以瞭解國產番茄之基本機械物性及負何鬆弛特性。文中引用一 般化Maxwell模式,予以預估模擬鬆弛特性。試驗中以物性分析儀,對採收後的番茄實施 恆定應變之負荷壓縮試驗,探討番茄採收後熟時,在室內自然環境下貯存過程之負荷鬆弛特 性。試驗結果顯示,國產番茄具有黏彈特性,其鬆弛時間因貯存時間增加致使果實逐漸後熟 而呈現逐漸減少的現象。本文已建立後熟對國產番茄負荷鬆弛之理論模式。 |
英文摘要 | Tomato fruit is often stored by piling into a box. The texture of the lower layer tomato fruits were damaged under compressing force for long time storage. Therefore it can reduce the quality and loose the economic value of market. A generalized Maxwell Model was used to study the effect of ripening on force-relaxation properties of domestic tomatoes. It was found that tomatoes had the viscoelastic characterization. The relaxation character of tomatoes was investigated by the compression experiment which was performed by a texture analyzer. The results showed that the relaxation time was reduced as the storage time of post-harvest increased and this model was appropriate and obtained high accuracy. |
