中文摘要 | 以離子層析儀分析綠茶茶湯在不同酸度及添加檸檬酸後的鋁物種。綠茶茶湯中含 有 0.20 mM 鋁、0.49mM 草酸、0.17mM 檸檬酸及 0.12mM 氟。綠茶茶湯之 pH 為 5.44,茶 湯的鋁物種是以草酸鋁複合物為主。當綠茶茶湯 pH 降低至 2,接近人體胃液的酸度,此時 並無鋁離子存在,茶湯的鋁物種是草酸鋁複合物及氟鋁複合物。將綠茶茶湯的 pH 降低至 1 ,茶湯中的草酸鋁複合物大部分解離,茶湯中的鋁物種以氟鋁複合物及鋁離子為主。綠茶茶 湯添加檸檬酸,使含有檸檬酸濃度為 1.8mM 綠茶茶湯,當 pH 降低至 2 時,此時茶湯中的 鋁物種是檸檬酸鋁複合物及氟鋁複合物。 |
英文摘要 | The species of aluminum compounds in green tea infusion treated with or without citrate at different pH values were studied using ion chromatography. The concentration of aluminum was 0.20 mM,that of critric acid was 0.17 mM that of fluoride was 0.12 mM, and that of oxalic acid was 0.49 mM in the green tea infusion. The oxalato-Al complex was the dominant aluminum species, and the fluoro-Al complex was negligible in the green tea infusion. At the simulated pH of human gastric juice, i.e., a pH value of about 2, both oxalato-Al and fluoro-Al complexes were found in the green tea infusion, but free aluminum ion existed in only a negligible amount. Fluoro-Al and free aluminum ion became the dominant aluminum species but oxalato-AI dissociated almost completely in the green tea infusion at a pH of 1. The aluminum species in the green tea infusion under a concentration of 1.8 mM citrate and at a pH of 2 were mainly citrato-Al and fluoto-al complexes. |
