中文摘要 | 本試驗之目的在研究嗜酸乳桿菌(Lactobacillus acidophilus)及雙叉乳桿菌(Bifido-bacterium bifidum)用於豆乳取代部分牛乳之酸酪乳的發酵,並藉此了解此取代方式對嗜酸桿菌及雙叉乳桿菌之生長動力學、酸的生成及最終產品中α-galactosidase與β-galactosidase生成的影響。研究中以部份豆乳取代牛乳製備酸酪乳,樣本包括100%牛乳,50%牛乳+50%豆乳,100%豆乳等三種基質,並以嗜酸乳桿菌與雙叉乳桿菌為菌□。結果顯示,L. acidophilus之比生長速率(μ,h-1)隨著基質中之豆乳比例增加而增加,但是B. bifidum之比生長速率卻無此趨勢。在酸的生成方面,當以100%豆乳培養時,L acidophilus的產酸量最高,而B. bifidum則最低。在酵素活性方面,L acidophilus在100%豆乳中培養所生成α-galactosidase與β-galactosidase之活性最高,B. fifidum之α-galactosidase活性以在50%牛乳+50%豆乳中培養者為最高,β-galactosidase的活性則以在100%豆乳中培養者活性最高。 |
英文摘要 | The objective of this study is to investigate the fermentation of yogurt partially replaced by soymilk with Lactobacillus acidophilus, Bifidobacterium bifidum and the effect of this replacement on growth kinetics, acid production and enzyme production of final products. Soymilk in combination with cow's milk were used in this investigation. Samples including 100% milk, 50% milk+ 50% soymilk and 100% soymilk were prepared and fermented with L. acidophilus and B. bifidum. The specific growth rate (μ, h-1) of L. acidophilus increased with the increasement of soymilk; however, the same pattern was not found in B. bifidum. Acid production of the 100% soymilk medium with L. acidophilus was the highest, whoever the lowest acid production were found in 100% soymilk with B. bifidum. The highest activities of α-galactosidase and β-galactosidase were found in 100% soymilk with L. acidophilus, whereas the highest α-galactosidase activities were found in 50% milk + 50% soymilk and the highest β-galactosidase activities were found in 100%solymilk with B. bifidum. |
