中文摘要 | 本研究應用ATP冷光反應技術作線上監測,在20次的評估定位清洗(Clean in place, CIP)後管路及充填口清潔度時,分別找到1及3次超過其管制界限,可有效掌握時效,都給 予及時矯正。在鮮乳瓶容器內壁未檢出有微生物依附(n=8)。而工廠充填區顯得清淨,空氣 微生物品質在1.8�b0.2 log CFU/100 L空氣。在六個月期間隨機取樣鮮乳製品作預培養試驗結 果顯示都能有穩定的製程狀況,其生菌數含量都在�T10 CFU/mL(21℃,18 h預培養)。至於 運輸和配送四次都溫控不當,並未造成所有試樣的生菌數含量偏高,而是在架售期溫度控制 不當的組別才會明顯造成鮮乳在架售期終了生菌數含量偏高,有些已達到10 CFU/mL。當 鮮乳製程管理適當,若到了運輸、配送、甚至架售時溫度的管理不當,則是造成產品酸敗的 真正原因。 |
英文摘要 | The ATP bioluminescence technique was applied in this study for the on-line monitoring of the microbial quality of a fluid milk processing plant. Among the 20 detections, one and three incidents of them exceeding their respective critical limit were found in the evaluation of the "Clean in place" (CIP) of the pipes and filler. Remedial actions were operated immediately under the advise. The microbial quality of the containers and the air in the filling area were evaluated. Residual bacteria was not detected in the container(n=8). The air in the filling area was apparently clean, with 1.8�b0.2 log CFU/100 L air. Through a 6 months period, the packed fluid milk product was randomly sampled, preincubated and subjected to the bacterial count test. The data, a total bacteria count equal to or less than 10 CFU/mL indicated good quality of packed milk product and stable operation of the plant. However, the temperature control of the packed fresh milk products during transportation and distribution were found to be improper and exceeded the labeled tolerable storage temperature, although this did not result in high bacteria count in all samples. Improper temperature control of shelf-storage in the market was found to be the major cause of elevated total bacteria counts (10 CFU/mL) in these samples before the expiration date. It is concluded that under sanitary operation condition in the milk processing plant, inadequate temperature control during transportation, distribution, and shelf-storage seems to be the major cause of the spoilage problem before expiration data. |
