英文摘要 | The oxidative stability of chemically synthesized triacylglycerols (TAGs) containing n-3 highly unsaturated fatty acids (HUFAs), such as eicosapentaenoic acid (EPA) and saturated (palmitic) or monounsaturated (oleic) fatty acids, was assessed. Oxidative stability was evaluated by oxygen absorption under the following three conditions: 1. TAGs with a-tocopherol; 2. TAGs dissolved in benzene with 2,2'- azobis(2,4-dimethylvaleronitrile) (AMVN); 3. TAGs dispersed in water with 2,2'- azobis(2-amidinopropane) dihydrochloride (AAPH). Generally, the oxidative stability of TAGs was independent of the storage conditions, and the stability depended mainly on the number of HUFAs in the TAG molecule; i. e., the oxidative stability of the TAG with EPA(E) and palmitic acid(P) in a ratio of 1/2 had the following order: PEP>PPE >>EEP/PPP(I: 1)>>EEE~PP(1:2). Both the oxidizability and, particularly, the kinetic chain length of EPA-containing TAGs were greater in TAGs with poorer oxidative stability. The effects of chemical structures on the oxidative stability of DHA- containing TAGs were principally similar to those of EPA-containing TAGs although the oxidation rate was greater in DHA-containing TAGs. The main oxidation products analyzed by HPLC, LC-MS were monohydroperoxy TAGs for all TAGs whereas monohydroperoxy epidioxides were detected as minor components. Bis- and tris-hydroperoxy TAGs were detected in autoxidized trieicosapentaenoylglycerol. The mounts of volatile compounds in oxidized TAGs also increased with the number of EPA in a TAG molecule; therefore, the flavor stability of TAGs containing more than 2 EPA was suggested to be very poor. The composition of volatiles was affected by the oxidation period and the structures of TAGs. Judging from the lymph-cannulation of rats, the absorption rate and recovery of dietary DHA in lymph was greater for DHA combined to the sn-2-position of glycerol than for DHA combined to the 1 or 3-position. |
