英文摘要 | The water activity (Aw) data for corn flakes and raisins were obtaines by the ERH determining technique at five temperatures. Four Aw models which take temperature effect into account and the GAB model were fitted to the Aw data, thereby their fittness were compared. The Modified-Henderson and Modified-Oswin equations were the adequate models for corn flakes. Comparing the results of this study with previously published data, the Aw properties of corn products were affected by processing method. Three sets of Aw data for raisins indicated the similar pattern. The GAB model that incoporated the temperature term did not have better fitting adility and became very complex for further application. |
