中文摘要 | 在加熱與冷卻過程中,稻穀溫度及水分梯度會影響胴裂。在乾燥及貯藏時,穀物 溫度與含水率受到環境的影響,影響稻穀胴裂的主要因素為溫度與含水率。本文主要目的為 探討冷卻通風條件影響稻穀胴裂的程度。 採用 4 × 4 複因子完全逢機試驗設計。 將直徑 160mm、高 20mm 通風塑膠圓盤鋪上一層稻穀,再置於 20 ℃恆溫槽內, 槽內相對溼度控制 於 30 ∼ 60 %之間。初始穀溫設定於 25 ℃、30 ℃、35 ℃和 40 ℃。試驗結果指出在冷 卻過程雖然溫度與溼度對穀物胴裂的影響為不顯著,但是高溫稻穀冷卻時所產生胴裂較多; 稻穀含水率變化有回潮現象或乾燥量愈大時產生胴裂的機率愈大。為防止通風冷卻發生胴裂 現象應調整通溼度在 40 ∼ 50 %之間。 |
英文摘要 | Both thermal and moisture gradient in rice kernel are potential factors for rice cracking. These gradients exist both in heading and colling of rice. During drying and storage, the grain interacts with its environment, exchanging heat and moisture. Temperature and moisture content are variables that have been given considerable emphasis in the study of rice cracking during drying process. The objective of this paper is to study the effect of colling air on cracking during the aeration of sored paddy. A 4 × 4 facorial completely randomized design was applied on an experimental storage bin of 160 mm in diameter and 20 mm in depth which was placed in a 20 ℃ environmental chamber. The paddy temperatures were set at 25 ℃, 30 ℃, 35 ℃ and 40 ℃. The relative humidity inside the chamber were between 30 % and 60 %. Although the effects of temperature and humidity on paddy cracking were not statistically significant in chilling process, more cracking were found in cooling process with high paddy temperature. The adsorption of moisture of paddy led to cracking of the grain. The cacking rate increase with the increasing of the moisture desorption. The suitable humidity for avoiding forming new cracking in rice during chilling process was found between 40 % and 50 %. |
