Longum CCRC 11847,以發酵利用黃豆浸豆水中之醣類等固 形物。 於 pH6.5 和 37 ℃之最適條件下,經過 24 小時培養後,混合菌種之發酵液中總有 機酸濃度可達 7 g/l,其中約含 80 %乳酸。 自 RO 收集之通透液為透明澄清之水,其 pH 接近中性,Hunter L 值超過 90,可回收做為工廠清洗及浸泡黃豆等用水。 |
英文摘要 | Soybean soaking water was investigated to recover water and soluble materials using a membrane system which consisted of nanofiltration (NF) and reverse osmosis (RO). Retentates of NF and RO were collected when the weight concentration ration (WCR) reached 7 and 6, respectively, which was equivalent to a total WCR 3.5 for the combined NF-RO system. The retentates were inoculated with the probiotic cultures of Lactobacillus acidophilus CCRC 10695 and Bifidobacterium longum CCRC 11847 to utilize the recovered soluble materials. Under an optimal fermentation condition of pH 6.5 and 37 ℃, about 7 g/l organic acids, mostly lactic acid, were harvested in 24 hours. The membrane permeated water was nearly neutral in pH with a Hunter L value above 90, which was reusable in the plant site for cleaning and soaking purposes. |
