中文摘要 | 柿子果實常因銷售前各項處理作業,受到外力作用,因而往往造成果肉組織上的 損傷,不但降低產品品質,而且不耐貯運,失去產品價值,影響收益。本研究針對柿子果實 ,利用物性分析儀,以正向及側向實施恆定靜壓縮負荷實驗,探討柿子果實的黏彈特性,以 建立適當模式,由實驗數據可知, 以 Burgers 四元件模式可準確預估柿子果實黏彈特性, 總變形量及彈性變形量會隨靜壓縮負荷值的增加而增加,而黏性變形量會隨靜壓縮負荷值的 增加而減少。 |
英文摘要 | Persimmons suffering from compression force due to processing result in tissue damage, which would be lowering the quality and not appropriate for storage. Persimmons were compressed with constant forces in normal and lateral directions respectively by a Texture Analyer to investigate it's viscoelasticity and to develop a suitable model. Based on experimental results. Burgers 4-element model can be used to predict the viscoelasticity of Persimmons precisely. By increasing compression force, total deformation and elastic deformation could be increased, while viscous deformation could be decreased. |
