中文摘要 | 臺灣地區的養豬事業已步入企業化經營方式,養豬戶雖減少,但每戶養豬頭數卻顯著增加,因而相對的產生大量豬糞尿廢棄物,這些廢棄物若未經妥善處理而任意排放,將汚染灌溉水質。本試驗乃於雲林田區進行田間試驗,探討豬糞尿汚水對稻米品質的影響。並期望在適當處理之下,一方面充作有機養分來源,另一方面減輕其對灌溉水質的汚染,以利作物生長,達到豬糞尿有效利用之目的。 試驗以田間豬糞尿進水口為起點,於距起點不同距離進行取樣及稻穀品質分析。結果顯示,碾米品質方面,糙米率以地下水灌溉之對照組顯著優於豬糞尿汚水處理組(p<0.05),白米率一期作各距離取樣點之間亦呈顯著差異(p<0.05),以地下水灌溉對照組之75.1%最佳,二期作則無顯著差異。完整米率一、二期作各取樣點均有顯著差異(p<0.05),一期作以取樣點靠近進水口10m處之62.2%為最佳,二期作以地下水灌溉對照組之67.6%最佳。 試驗之水稻品種長度均屬短粒粗圓型,不易受豬糞尿汚水之影響。白米透明度田間試驗各取樣點之間達顯著差異(p<0.05),一期以地下水灌溉對照組之4.33為最佳,二期作也以地下水灌溉對照組之3.67最佳。白粉質米粒一期作無顯著差異,二期作心白及腹白則有顯著差異(p<0.05),心白則以取樣點距離豬糞尿進水口4m處之0.1為最少,腹白則以取樣點距離進水口10m處之1.0為最少。 米粒化學性質:鹼性擴散質均為7級,皆屬低糊化溫度。田間試驗各取樣點之直鏈性澱粉含量皆無顯著差異。而粗蛋白質含量者,則豬糞尿汚水灌溉區較地下水灌溉之對照組為高。膠體延展性一期作無差異,二期作以地下水灌溉之對照組顯著優於取樣點距離進水口1m處(p<0.05)。 米飯物理性之硬度、粘度、均衡性皆有顯著差異(p<0.05),地下水灌溉組優於豬糞尿汚水處理組,凝集性各處理之間無顯著差異。附著性、粘性則以地下水灌溉之對照組為最佳,彈力性則無差異,咀嚼性田間試驗一期受豬糞尿汚水處理有差異,二期則無差異。食味結構指數各處,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,,, |
英文摘要 | To recycle use swine-waste and reduce its pollutant impact on environment, the objective of this study has been to investigate the effect of applying swine-waste in irrigation system of rice on grain quality. A field experiment was performed in the 1st and 2nd crops of 1992, the influence of irrigation treated with swine-waste on rice grain quality was investigated. The field was divided into 6 sections based on their distance from irrigation gate, the grain quality of rice in each section was measured. Grain quality of a field with swine-waste irrigation over consecutive 7 years was also measured. Using soil nitrogen content as an index of the impact of swine-waste treatment, soil nitrogen content of each section was positively correlated with its distance from the gate. In milling quality, treatment with ground water (control) had higher brown and head rice ratio, especially in the 1st crop. Grain size was not affected by treatment. Ground water irrigation had the highest translucency. Significant difference on grain chalkiness was found only in the 2nd crop, the lowest white center and white belly appeared in the grain of sections 4m and 10m from irrigation gate respectively. In chemical quality, treatment had no effect on grain alkali spreading value and amylase content. Grains of treated sections showed higher crude protein content than those of ground water irrigation. Texture of grains from swine-waste treatment showed significant lower value in hardness, viscouseness and balance, but not in cohesiveness. Grains from the field of consecutive-waste treatment had the worst value in adhesiveness and stickiness, and in turn a lower palatability index. The present results suggest that irrigation with low concentration of swine-waste may not have significant influence on grain quality, but the long-term accumulative effect should e taken for cautiousness. |
