中文摘要 | 本實驗分為兩部份:一為鯖魚內臟油脂之脂肪酸分析及其油脂之超臨界流體萃取(SFE);一為探討萃取所得之內臟油脂是否無食用安全上之顧慮。 分析從市場購得之鯖魚內臟之脂肪酸組成百分此,發現與其魚肉之脂肪酸並無明顯之不同。而內臟中之二十二碳六烯酸(DHA)及二十碳五烯酸(EPA)則合佔總脂肪酸量之四分之一。 為了解鯖魚內臟油脂之食用安全性,以SD大白鼠為實驗動物,並以胃管每兩天投與1毫升之沙拉油或以超臨界流體萃取法所得之鯖魚內臟油脂,二週後比較其肝體此,血漿中之膽固醇、三酸甘油酯、LDH (lactate dehydrogenase)值、GOT(glutamiC oxaloace-tic transaminase)值、GPT(glutamic pyruvate transaminase)值以及脂肪酸組成等,發現內臟油組之三酸甘油酯之量降低,而LDH值、GOT值及GPT值也都較控制組為低,且無肝腫大或其他肝臟受損之跡象。因此,由本實驗之結果推測,以超臨界流體萃取法所得之鯖魚內臟油脂,應可考慮其作為食用之可能性。 |
英文摘要 | The experiment consisted of two parts: one was supercritical fluid extraction (SFE) of mackerel visceral oil and analysis of its fatty acid composition, the other was a study on its edible safety. The fatty acid percentage compositions of mackerel meat and viscera were determined and found not significantly different between the two tissues. The content of docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) combined in mackerel viscera was as high as about one fourth of the fatty acids altogether. To perform the safety test, 1 ml of the visceral oil extracted by supercritical fluid extraction (SFE) was infused to Sprague Dawley (SD) rats every two days. Two weeks later, the hepatosomatic index (HSD, the values of cholesterol, triglyceride, lactate dehydrogcnase (LDH), glutamic oxalocetic transaminase (GOT), glutamic pyruvate transaminase (GPT) in plasma, and the fatty acid composition in liver were compared with those in the control, of which the rats were treated with soybean oil in the same manner. The results showed that the rats in the visceral oil group had lower values of triglyceride, LDH, GOT, and GPT than in those in the control and had no signs of hepato-megaly. From the results showed in our experiment, the possibility of using mackerel visceral oil extracted by SFE method for edible purpose can be seriously considered. |
