中文摘要 | 分析 魚參 魚之魚肉及內臟中各種脂肪酸之含量,內臟都比魚肉高出許多,至於脂肪酸組成百分比,兩者間並無明顯之不同。而內臟中之二十二碳六烯酸(DHA)之含量則高達3,435mg/100g。比較以不同之萃取方法所得之 魚參 魚內臟油脂之脂肪酸組成百分比,發現以有機溶劑萃取法及自家消化煮取法所得之各種脂肪酸組成並無太大之差異,然而以超臨界流體萃取法(SFE)所得之內臟油脂則含較高比例之C16:0及C18:0,而二十二碳六烯酸及二十碳五烯酸(EPA)的組成百分比則較其他二法為低。以SD大白鼠為實驗動物,並以胃管每兩天投與1毫升之沙拉油或不同萃取方法所得之 魚參 魚內臟油脂,二週後,比較其肝體比,血漿中之GOT值、GPT值以及肝臟中的TRA值與脂肪酸組成等,發現除了有機溶劑組可能因有機溶劑之殘留而有肝腫大的現象外,其他二組皆無肝臟受損之跡象。因此,以自家消化煮取法及超臨界流體萃取法所得之 魚參 魚內臟油脂,其食用安全性較佳,而以有機溶劑萃取法所得之 魚參 魚內臟油脂,若油脂中之有機溶劑未能完全去除,其食用安全性堪虞。而超臨界流體萃取法若能進一步提高其萃取率,則可望成為此三種萃取方法中最佳之萃取方法。 |
英文摘要 | Amberfish meat and visceral oils perpared by organic solvent extraction (OSE), supercritical fluid extraction (SFE) and autolysis methods were analyzed for fatty acid composition and evaluated for possible toxicity. The oil content was significantly higher in viscera than in meat, and as high as 3435 mg docosahexaenoic acid (DHA)/100 g, was found in viscera. However, the fatty acidcomposition () was not significant different between the meat and visceral oils.SFE method resulted in a lower yield, and the of Cig and 013:0 were higher,while the of DHA and eicosapentaenoic acid (EPA) were lower, than the oilprepared by the other two methods. To evaluate the possible toxicity, male Sprague-Dawley rats aged 28 days were given 1ml of visceral oil or soybean oil every 2 days. After 2 weeks of feeding, the hepatosornatic index, activities ofglutamic oxaloacetic transaminase and glutamic pyruvate transaminase in plasma,and thiobarbituric acid reactive substances and fatty acid composition in liverwere determined. Except for rats treated with visceral oil prepared by OSE,which developed hepatomegaly possibly due the solvent residue in the oil, noother signs of toxicity were found. The results obtained suggest that visceral oilprepared by SFE or autolysis method does not cause liver damage. If the yield can be improved, SFE may be the method of choice for extracting oil fromamber fish viscera. |
