中文摘要 | 本實驗針對臺灣地區60種常見市售生鮮和加工水產品的嘌呤含量加以定量分析。結果顯示水產品的嘌呤含量皆屬中高含量群。各嘌呤鹼基含量於魚、蝦、軟體動物皆以次黃嘌呤(hypoxanthine)的含量為最高,於貝類中則為腺嘌呤(adenine)。各類產品中每100g生鮮產品的總嘌呤含量以乾製品為最高,其平均值達648.8 ± 38.3mg/100gwet Wt.,其餘水產品依序為蝦類及貝類分別為160.1 ± 27.6mg和150.9 ± 11.2mg,罐藏品145.8±16.2mg,海水魚及養殖魚則為124.7 ± 52.8mg及115.9 ± 11.2mg,其中海水魚嘌呤含量分布廣,魚種間差異大;養殖魚含量分布則較為一致。軟體動物則在84.1 ± 31.3mg的範圍,除了烏賊之含量較偏高外,其餘含量皆低。各類產品中含量最低者為煉製品53.1 ± 27.8mg,其原因可能與加工過程中的水洗有關。 |
英文摘要 | Levels of purine bases were determined in 60 fresh or processed fisheryproducts selected from the market. The results indicated that the fishery products contained moderate or high concentration of purine bases. Hypoxanthinedominated in fish, Crustacea and mollusca, while adenine was the highest purinebase in shellfish. The dried fishery products had the highest total purine contentwith a mean value of 648.8 ± 238.3 mg/100 g wet wt. The total purine contentof fishery products was arranged in order as following: crustacean, 160.1 ± 27.6mg; shell fish, 150.9 ± 46.1 mg; canned fishery products, 145.8 ± 16.2 mg; sea fish, 124.7 ± 52.8 mg and cultured fish, 115.9 ±11.2 mg. However, a wide variation fortotal purine contents occurred in different sea fish species, while little variationwas observed in cultured fish. Mollusca contained low levels of purine bases witha mean value of 84.1 ± 31.3 mg with the exception of cuttlefish. Surimi productshad the lowest levels of purine bases at 53.1 ± 27.8 mg, possibly due to the soibilization of some bases by washing during processing. |
